СЬОМГА ПЕЧЕНА В КОРА ОТ МОРСКА СОЛ

Порции: 8
• Една цяла сьомга (около 2,5 кг), филетирана и почистена
• 1,25 кг морска сол
• 9 белтъка
• сос
• 30 гр супени лъжици каперси
• 350 мл шампанско
• 125 гр студено масло
• 1/2 лимон
• пресен естрагон

Начин на приготвяне: 40 мин
1. Загрейте фурната до 190 градуса С.
2. Комбинирайте морска сол и белтъка в купа и разбъркайте добре. Сместа трябва да бъде леко влажна.
3. Пригответе за печене тава с хартия за печене и да направи легло за сьомгата със сместа от сол,
4. Покрийте вътрешността на сьомгата със сол и го положи на леглото от сол смес. Поставете останалата сол сместа върху рибата и я потупа надолу, което прави запечатана със сол черупка
5. Пече се за 25-30 минути.
Сос:
6. Добавете каперсите към горещ тиган и запечете в продължение на 30 секунди. Добавете шампанското и да се намали наполовина. Прибавете маслото едно парче в даден момент и разбърквайте докато се разтопи. Повторете до последното парче масло.
7. Добавете останалото масло, сок от лимон, листа естрагон и сол на вкус.
Сервиране:
8. Извадете рибата от фурната и нека почивка за 10 минути.
9. Пробийте кората сол и я изхвърлете. Обелете кожата от сьомга и извадете първата половина на рибата или цяло или на части.
10. Сервира се със сос от естрагон и шампанско
