ШАТОБРИАН С КАРТОФИ МАКСИМ
Шатобриан е сочно печено говеждо филе със сос от вино във френските ресторанти. Тази рецепта за Шатобриан е традиционната за ресторант, много просто подправено филе , печено до съвършенство, а след това нарязано по диагонал. Направете бърз винен сос с лук и сервирайте ястието с картофи за автентичност.
НЕОБХОДИМИ ПРОДУКТИ:
1 бр говеждо филе
20 гр масло
20 мл зехтин
сол
смлян черен пипер
100 гр лук, нарязан на ситно
100 мл червено сухо вино
100 мл сос демиглас
10 гр масло, омекотена
20 гр изсушен естрагон
НАЧИН НА ПРИГОТВЯНЕ:
Загрейте фурната до 200 С. Разтопете маслото и зехтина заедно в широк тиган поставете над средно-висока температура. Овкусете говеждото месо със сол и черен пипер на вкус.
Поставете месото в тигана и го оставете в продължение на поне 3 минути. Използвайте щипки, за обръщане на филето Внимателно поставете на другата страна в продължение на 3 минути. Повторете цялата процедура за препичане на повърхноста на месото.
Поставете филето върху скара в тава за печене във фурната. Печете говеждото месо от 15 минути до 23 минути . Прехвърлете Шатобриана във фолио за да отпочине в продължение на 15 минути.
Докато филето си почива, направете соса с вино. Сотирайте нарязания на ситно лук в тиган с остатъците от сокове в тигана. Добавете виното в тигана и оставете соса да заври, остъргвайки запечени частици от месото на дъното на тигана.
Продължете редуциране на соса наполовина. Добавете демиглас към соса и се оставя да кипи сместа докато се сгъсти. Махнете соса от котлона и се разбърква с масло и естрагон.
Сервирайте Шатобриан, нарязан по диагонал, с винен сос и картофи Максим.
