ТЕЛЕШКО С БИЛКОВА КОРА И ЗИМНИ КОРЕНИ

НЕОБХОДИМИ ПРОДУКТИ:

Билкова панировка:
100 гр. Магданоз
50 гр. Масло
50 гр. Естрагон

Телешко филе:
500 гр. Телешко филе
100 гр Лайм
100 гр Портокал
100 гр Лимон
20 гр. Захар
20 гр. Сол
10 гр. Майорана
10 гр. Босилек
10 гр. Магданоз

Зимни корени:
400 гр Бейби моркови

500 гр Лилави картофи
3 гр куркума
100 гр артишок
Екстра върджин зехтин
Сол

Телешки сос с билки:
500 мл Телешки бульон
Ароматни билки
50 мл Мадейра

Декорация на чинията:
Ароматни билки

 

 

НАЧИН НА ПРИГОТВЯНЕ:

Панировка с билки:
Разбийте маслото заедно с наситнените билки до получаване на хомогенност.

Телешко филе:
Нарежете телешкото филе на две части и ги мариновайте за около два часа със сол, захар, ароматни билки и настъргана цитрусова кора. Извадете месото от маринатата, изплакнете го и го подсушете добре. Запечатайте телешкото филе от двете страни и печете на 160°C за около 7 минути. Покрийте месото с билковата панировка и нарежете на филийки.

Зимни корени:
Измийте  зеленчуците. Оставете бейби морковите настрана, овкусете ги с олио и сол, като внимавате да ги оставите непокътнати. Сварете артишока в подсолена вода. Повторете същата операция с лилавите картофи. Овкусете с олио и сол.

Телешки сос  с билки:
В тенджера смесете бульона, мадейра, част от ароматните билки и редуцирайте до получаване на 100 мл течност. Сгъстете соса с царевичното нишесте, предварително разтворено в малко студен телешки бульон, загрейте всичко и подправете със сол. Добавете билките към соса.

Начин на приготвяне:
На дъното на чинията се разпределя телешкото подправено с билки. Отгоре поставете предварително подготвените зимни корени. Добавете нарязаното  телешко. Украсете всичко с ароматни билки.
