КАРАМЕЛИЗИРАНИ ПОРТОКАЛИ С МЕД И МАСКАРПОНЕ

2000 гр портокали
200 гр орехови ядки
350 гр захар
50 гр сладко от портокалови кори
50 гр мед
100 мл сметана

300 гр маскарпоне
100 гр захар
300 мл сметана

0,1 гр ванилия

0,5 гр карамфил

НАЧИН НА ПРИГОТВЯНЕ
Сложете захарта и водата на котлон за около пет минути на среден огън. Захарта ще се карамелизира, когато стане кафява, добавете сладкото от портокалови кори и меда и нарязаните заедно с кората на полумесеци портокали ( предварително ги накиснете цели в разтвор със сода бикарбонат), с подправките и не спирайте леко да ги бъркате. Извадете портокаловите резени и добавете сметаната. Сметаната ще размекне карамела. Когато разтворите карамела в сметаната добавете ореховите ядки

Разбийте сметаната и добавете захар . Разбъркайте на средна скорост на миксера. След получаване на сняг, добавете маскарпонето и разбийте до еднородност.

ПРЕЗЕНТИРАНЕ

Оформете в плато портокаловите резени като роза и добавете маскарпонето. Залейте със сметановият сос и орехови ядки.
