ОМАР С ПЮРЕ ОТ МОРКОВИ И ГЛАЗИРАНИ ЗЕЛЕНЧУЦИ

НЕОБХОДИМИ ПРОДУКТИ

За 4-ма души

 

  • 4 бр омари 600 гр всеки
  • 400 гр моркови
  • 200 гр цвекло
  • 200 гр тиква
  • 500 гр моркови
  • 20 гр мед
  • 1 връзка магданоз
  • 50 мл сметана
  • 10 мл зехтин
  • 500 мл пилешки бульон
  • 1000 мл телешки бульон
  • салата зеле
  • 100 гр лук
  • 1 стрък мащерка
  • 100 мл бяло вино
  • 10 гр масло

НАЧИН НА ПРИГОТВЯНЕ

Омар

Сварете вода с нарязан лук, мащерка и бяло вино. Потопете омарите за 3 минути във врящата вода, охладете ги, обелете ги и ги сотирайте в зехтин.

Зеленчуци

Обелете морковите, покрийте ги с пилешки бульон и варете до пълното изпаряване на водата. Поставете ги в блендер и добавете сметаната. Сварете другите зеленчуци и ги глазирайте с пилешки бульон, мед и  маслото.

Емулсия

Бланширайте магданоза във вряща вода, прецедете го, изстискайте го, и го сварете с пилешки бульон, пасирайте и монтирайте със зехтин.

ПРЕЗЕНТИРАНЕ

Направете запетая от пюрето от моркови, сложете другите зеленчуци върху запетаята с листа зелена салата. Сложете точки от соса и емулсията върху омара.
