Задушете пъстървата на пара. В дълбок глинен съд изсипете почистената от главата и гръбнака, пастърва, гъбите и чушката. Поръсете с магданоз, сол и пипер на вкус. В тиган разтопете маслото и запържете в него брашното. Добавете студеното мляко и сметана, като бъркате непрекъснато. за да не стане на бучки. Варете бешамела на слаб огън. Овкусете със сол и пипер на вкус. Изсипете соса върху рибата и отгоре поръсете с галета. Печете, докато се образува златиста коричка, на 180 градуса. Поръсете с магданоз, преди да сервирате.
