НАЧИН НА ПРИГОТВЯНЕ:
Почистените от гръбначната кост пържолите се начукват и се подправят с черен пипер и сол. Шунката се нарязва на тънки ивички, кашкавалът на кубчета, гъбите на ситно (ако са пресни, предварително се задушават и охлаждат). Нарязаните продукти се смесват с неразтопеното масло. От тази смес се приготвят кебапчета, които се поставят в средата на пържолите и се покриват с краищата им. Панират се в брашно и се изпържват в загрятата мазнина, най – напред при висока температура, а след това на умерено нагряване. Изпържените пържоли се поднасят в затоплени чинии и се гарнират с пържени картофи, задушен грах и др.
