ГЪШИ ДРОБ С ТРЮФЕЛИ

 

НЕОБХОДИМИ ПРОДУКТИ:

800 гр суров гъши дроб

40 гр трюфели

4 мл балсамов оцет

 

НАЧИН НА ПРИГОТВЯНЕ:

Загрейте фурната до 250 градуса С.

Поставете целият гъши дроб във загрятата фурна овкусено със сол и черен пипер.

Трябва гъшият дроб да се стопи наполовина във фурната за 15 минути, като го завъртите по 2 пъти по време на готвене.

Почистете с върха на малък нож, екстракта от пръст и пясък, попаднали в кухините на трюфелите. Почистете ги с влажна четка и след това ги обелете, като картофи, премахвайки възможно най-малко обелките.

Натрошете трюфела с вилица, за да се получат неправилни парчета.

Разтрийте тиган със скилидка чесън и запържете трюфелите за минути.

Извадете готовият гъши дроб и изцедете на хартиени кърпи за десет минути.

Вземете една трета от разтопената мазнината и разбъркайте с печените трюфели със сока. Добавете балсамов оцет, сол и черен пипер.

Нарежете гъши дроб на тънки филийки и ги подредете върху плато. Залейте ги със сос и сервирайте много горещи с гарнитура от пресни зеленчуци.
