ПИЛЕШКИ КЪСЧЕТА СЪС СОС БАЗИЛ
НЕОБХОДИМИ ПРОДУКТИ:
1000 гр обезкостени, без кожа пилешки филенца
10 мл бял винен оцет 20 гр счукан чесън
подправки 10 гр смляно индийско орехче 10 гр бахар 10 гр кардамон 5 гр лъжичка сол 5 гр черен пипер 5 гр кимион (по желание) 50 мл олио (не зехтин) сок от 1 лимон 200 гр кисело мляко
За соса Базил
50 мл растително масло 30 гр чесън 5 гр сол
100 гр червени пиперки
100 гр лимон
100 мл готварска сметана
Измийте пилето със студена вода и се добавете капка бял оцет на ръцете си и го втрийте в пилето. Добавете всички подправки заедно с чесъна. Добави в олио и лимонов сок и разбъркайте добре с киселото мляко, за да направите марината. Излейте маринатата върху пилето в купа и се оставя да се маринова между 2-4 часа. След най-малко 2 часа мариноване в хладилника, нарежете пилешките филета на късчета и ги запечатайте в тиган с малки зехтин, като обръщате на всеки 4 минути. Оставете месото да почива в продължение на 5 минути.
Добавете лимонов сок, чесън и лимонова кора и на ситно нарязани червени пиперки в същия тиган. Разбъркайте над средно-висока температура, около 30 секунди. Добавете пилешки бульон да ври, докато се намали до сос , около 8 минути. Прибавеет босилек в соса и готварска сметана . Подправете на вкус със сол и черен пипер. Сервирайте пилешките хапки със сос Базил.
