Рибата се филетира и посолява леко и се поръсва с пипер и лимонов сок. Покрива се с фолио и се оставя в хладилника. Измитият и почистен праз лук се нарязва на кръгчета. Бланширайте праза за 3 мин в гореща вода и го шокирайте със студена вода за да запази цвета си. Измитите и отцедени билки се миксират в блендер заедно с белият хляб без кора , маслото и жълтъка на по едро. Подправете със сол и черен пипер. В загрято масло запържете рибните филета за 5 минути от двете страни. Сипете сметаната и мастиката в тигана и варете докато се редуцира наполовина. Свалете тигана от котлона и прибавете студено масло, нарязано на парченца. Загрейте конвектомата до 160 С. Намажете рибните филета с билковата смес. В тава поставете нарязан лук и залейте със сметана, върху него поставете рибата и запечете за 15 мин.
