Картофите и морковите се измиват, сваряват се и се обелват докато са топли. Настъргват се на едро ренде. Зелето се нарязва на дребно и заедно с почистеният, измит, попарен и нарязан на дребно спанак се прибавя към ситно нарязаните и задушени в част от мазнината  лук и червени домати и се задушава до изпаряването на водата. Оставят се да изстинат напълно. Прибавят се към настърганите моркови и картофи,  жълтъка на яйца, натрошеното на ситно сирене, накиснатата киноа, сол на вкус, магданоз  и подправките. Омесва се много добре и се оставя да престои ½ час. След това се оформят топчета като се овалват и заглаждат старателно (за да избегнете пръскането по-късно) и се потапят в брашно. Кюфтетата се потапят  в разбитите добре белтъци и веднага се слагат в горещата мазнина. По желание след като се потопят в яйцето може отново да се овалят в галета и сусам. Пържат се до зачервяване . Сервират се с цедено кисело мляко.
